After wedding I had no choice than to learn cooking, mainly cos I need yummy food..secondly ..wat else cud it be ..impress my hubby :P and being on H4 the only pass time is cooking,, and eventually I started to enjoy cooking..:) it has become more of a passion now. Egg Cheese Mushroom Macroni

Karthick came home like this " am really hungry. hope u got sthing to eat" and I was just then thinking about what I should do for dinner. But then I was forced to say a "Yes!!!!" cos u never know what hunger can do... so by the time he got refreshed, I made this delicious dish - Egg Cheese mushroom macaroni.

Ingredients:
1. shredded cheese
2. macaroni or spaghetti boiled and cooked as per instructions over the cover.
3. 4-5 mushroom cut into fine pieces and boiled.
4. 2 eggs made into bhurji type.
5. onions tomatoes and green chillies.

Method:
1. take a kadai, put oil.
2. add the onions and tomatoes and fry them finely.
3. add the chillies, boiled mushroom and egg bhurji(prepared sep)
4. fry finely
5. add the macaroni and allow it cook for 4-6 mins.
6. spreading the shredded cheese over the hot macaroni.

Serve the delicious dish to the hungry man and have a wonderful evening:)

Carrot Pudding or Carrot Halwa

The most easiest sweet to cook but its kinda pain wen u gotta shred the carrot. Blending the carrots using a mixi or blender will actually spoil the dish. U have no other choice other then shredding it. Its def so sweet of my hubby to do tat job and help me say that carrot pudding is the most easiest dish to cook :P

Once the shredding is done, it takes just about 15-20 mins to eat ur delicious carrot pudding.

Ingredients:
1. 2 lb "shredded carrot"
2. condensed milk 3-4 tablespoons or boiled milk 2 cups
3. fried cashews.
4. sugar :
if condensed milk: 2 - 3 table spoons
if milk - 1/2 cup sugar
5. ghee - 3 table spoons.

Method:
1. Put 2 table spoons of ghee in a non stick kadai.
2. Once its melted, add the shredded carrots.
3. keep stirring it until the carrot gets cooked.
4. Once the carrot get cooked and the qty gets shrinked, add the condensed milk
5. Keep stirring for abot 6-7 mins till the milk gets evaporated not completely though.
6. Add the sugar and the fried cashews ( fry the cashews in Ghee)
7. Serve the desert cold or hot as preferred.

Chole Masala

well this is a very usual recipe and yea almost everyone would be knowing the best way to make it. But I feel my recipe is more north and south Indian fusion.. its tastes hot and it has this sour taste which goes really well with rotis or pooris and it takes about jus 20 mins to prepare it. The most easiest dish I would say.

Recipe for 3-4
Ingredients:
1. A little more than half a cup of White chickpea immerresed in water for more than half a day ( if it is sprouted its all the more tasty- my mom s suggestion :))
2. 1 1/2 tomato
3. 1 1/2 onion
4. 4 green chillies
5. 2 table spoon chilli powder
6. 1 table spoon corriander powder
7. 1/2 table spoon chole masala powder
8. 1/2 t-spoon of Amchur powder (Dry mango powder)
7. 1/2 table spoon salt
8. 1 bay leaf, 2 cloves, cinnamon, curry leaves, cilantro, cumin seeds
9. 1 table spoon ginger garlic paste
10. 1/2 table spoon butter
11. salt to taste

Method:

1. Boil the dal in pressure cooker-> 1 sound-> put it on sim for 10 mins
2. cut the 1 Tomato and 1 onion and fry them nicely in a pan
3. Switch off the stove. Allow it and cool and then grind it in a mixi till it becoems a fine paste.
4. Add oil in the pan and add cumin seeds,bay leaf, cloves, cinnamon wait for it to splutter.
5. Then add the rest 1/2 onions and fry until it becomes golden brown.
6. Add ginger garlic paste and green chillies. Fry it finely. Add rest 1/2 tomatoes
7. Add Chilli powder+corriander powder+ Chole masala + Amchur powder
8. Fry it finley teill the oil splutters out.
9. Then add the paste made in step 3
10. Add 2 cups of water
11. Keep aside 10-15 channa separately and put the rest into the pan
12. Grind the 10-15 channa into a fine paste and pour itinto the pan
13. mix the paste prepared in step 9
14. Boil themixture for 10 mins in medium flame until the it becomes a gravy.
15. Add the butter.
16. Garnish with it with cilantro and serve with hot rotis or pooris

badam halwa

Badam halwa , the most favorite recipe of every sweet lover and it is although more a special dish, because it is my hubby's favorite sweet:)

And the first I made it was on his first b'day after our marriage:) and trust me it came out very well. I wanted to share this recipe to all the sweet lovers. Also wanted to start of this blog with a sweet:)



Ingredients:
1 cup badam
1 1/4 cup sugar
1 pinch saffron
1 tspn yellow color powder
1 table spoon ghee

Preparation:
1. soak the badam in water for 2-3 hours and peel the skin of badam.
2. crush it in the mixi with very little amount of milk, so that it comes out as a fine paste.
3. take non stick kadai and add sugar and stir untill it becomes a syrup.
4. add the badam paste and stir it finely in low flame.
5. add the yellow color powder and stir it gently.
6. now afetr 10 mins or so remove the kadai from the stove.
7. add the ghee and mix it heavily such that it becomes semi solid.
8. Garnish the delicious badam halwa with a pinch of saffron

Tip:
If you prefer a badam kheer add 1/2 cup milk when you add sugar.
